Chocolate Coconut Bars

These delicious dark chocolate coconut bars are perfect for satisfying your sweet tooth without the unhealthy ingredients often found in supermarket bars. Packed with nourishing ingredients, they’re an excellent snack to meal prep for the week.

Ingredients:

  • 180g soft dates

  • 120g desiccated coconut

  • 3 tbsp almond butter

  • 1-2 tbsp maple syrup

  • 170g - 200g of 70-85% dark chocolate

Instructions:

  1. Blend the Base: In a food processor, blend together the dates, desiccated coconut, almond butter, and maple syrup until the mixture sticks together and holds its shape. If the mixture is too sticky, add more desiccated coconut. If it’s too dry, add a bit more almond butter or maple syrup. Taste the mixture regularly to ensure the flavour and consistency are just right.

  2. Shape the Bars: Transfer the mixture into a silicone mould tray, pressing it firmly to form the bars. Place in the fridge for 20 minutes to set.

  3. Add the Chocolate Layer: Melt two bars of your chocolate of choice and pour it over the bars to create a thick, glossy top layer.

  4. Chill and Enjoy: Return the bars to the fridge for about 45 minutes, or until the chocolate is fully set. Once hard, remove and enjoy your nourishing, sweet treat!

These bars are perfect for busy days, providing a healthy, on-the-go snack packed with wholesome ingredients.
